Vegetables / Olericultures
Vegetables / Olericultures
Vegetable production exceeds 1.5 billion tonnes globally, but the crops grown, the production methods used, and the markets served differ fundamentally between regions. Dutch greenhouse tomatoes grown under LED lighting and hydroponic systems represent a different product from open-field tomatoes cultivated in Almeria or subsistence vegetable plots across South Asia. Olericultures recognises these regional distinctions.
Regional Character
China produces approximately 700 million tonnes of vegetables annually, some 46% of global output (IndexBox, 2024). Production methods range from intensive open-field cultivation to expanding protected-environment systems. India, the second-largest producer at 197 million tonnes, is dominated by smallholder farms where onions, tomatoes, and potatoes are staple crops for a price-sensitive domestic market.
The Netherlands leads in controlled-environment horticulture. The Westland glasshouse district operates high-tech systems with climate control, LED supplemental lighting, and hydroponic growing. Half of Dutch greenhouse vegetable production is exported to Germany and the United Kingdom.
Spain's Almeria region, known as the "sea of plastic" for its concentration of polytunnels, is Europe's largest vegetable exporter, producing tomatoes, peppers, cucumbers, and lettuce for northern European markets year-round.
Producing Regions
| Region | Key Crops | Production Method | Trade Character |
|---|---|---|---|
| China | Leafy greens, brassicas, Solanaceae | Open-field, expanding protected | 700 MMT (46% of global production) |
| India | Onions, tomatoes, potatoes | Smallholder, open-field | 197 MMT, primarily domestic consumption |
| Netherlands | Tomatoes, peppers, cucumbers | Glasshouse, hydroponic, LED | World leader in controlled-environment yield |
| Spain | Tomatoes, peppers, lettuce | Polytunnel, open-field | Europe's largest vegetable exporter (Almeria) |
| Turkey | Tomatoes, peppers, aubergines | Open-field, greenhouse | Major Mediterranean producer and exporter |
| Italy | Tomatoes, artichokes, courgettes | Open-field (south), protected (north) | Premium PDO/PGI vegetables, strong EU identity |
| USA | Potatoes, tomatoes, onions | Large-scale mechanised | 46 MMT, third-largest global producer |
| Poland | Cabbage, carrots, onions | Open-field | Major EU supplier, cold-climate root vegetables |
Production and Trade
Global vegetable production reached approximately 1,518 million tonnes in 2024, valued at $1,401 billion at export prices (IndexBox). This represented a slight decline (0.7%) from the 2023 peak. Potatoes remain the largest single category at 378 million tonnes, followed by tomatoes at 190 million tonnes.
The global harvested area covers approximately 70 million hectares with an average yield of 22 tonnes per hectare.
Spinach recorded the fastest volume growth among major vegetables at 3.4% CAGR (2013-2024). Cucumbers and gherkins recorded the fastest value growth at 6.9% CAGR. GLOBALG.A.P. provides the principal pre-farmgate certification standard for vegetable exports. The Codex Alimentarius Commission sets maximum residue limits (MRLs) for pesticides in traded vegetables. The FAO monitors global vegetable production and trade flows.
EU PDO and PGI registrations protect origin-identified vegetables including Opperdoezer Ronde potatoes (Netherlands, PDO, restricted to 100 hectares), Genovese basil (Italy, PDO), and Brabantse Wal asparagus (Netherlands, PDO).
Why Olericultures
The plural matters. Dutch hydroponic tomatoes and Spanish polytunnel tomatoes are not interchangeable products. They carry different production costs, different carbon footprints, and different positions in retail procurement. Opperdoezer Ronde potatoes, restricted to 100 hectares around a single church in North Holland, occupy a different market segment from commodity potatoes grown at industrial scale in Idaho.
Origin, method, and certification determine value.
On Iferous.com, we connect vegetable-producing nations and their agricultural agencies with international retailers, processors, and food service buyers who recognise that provenance and production method drive procurement value. The platform supports GLOBALG.A.P. compliance, origin traceability, and direct engagement between producing governments and importing markets.
